A 9 month matured semi hard tomme that is made using sheep & goat’s milk from the Basque country of France. Being aged more than the chebris, this cheese displays more of the flavour profile we love; nutty, caramel, balanced sweetness and lengthy umami notes.
This cheese is best served with ripe stone fruits or plum jam and a muscadet or Languedoc wine of France.
