Located in the heart of Basque Country, right in the center of the milk collection area for Ossau-Iraty, Macaye is the ideal location for a cheese dairy. Pronounced “mah-kaiye”, this small village is nestled at the foot of the Pyrenees Mountains near Espelette. Milk is processed from around 250 farms. Chabrin is a naturally-rinded pressed cheese, made to a traditional recipe.

Each wheel is aged in their cellars or hâloirs, for three months giving a lovely mineral aroma.
Mild goats’ milk flavour with sweet and nutty overtones, and a dense but smooth, creamy texture that coats the palette and lingers, makes this a very approachable introduction to goats’ milk cheese.
Onetik is a unique cooperative, emphasising quality over quantity and preserving tradition.
