Australia’s best cheese right now! Driftwood is a slow lactic set cow’s milk washed rind cheese wrapped in spruce bark, made at Long Paddock, Dja Dja Wurrung, Castlemaine, Victoria. It is made in the style of the famous Mont d’Or of France and the Winnimere by Jasper Hill Cellars in Vermont, USA.
What begins as a mild grassy flavour intensifies developing earthier, distinctive mushroom (almost meaty) characters as it ages.
Organic milk from a mixed herd of Friesian, Jersey and Australian Dairy Shorthorn cattle is the foundation of Long Paddock cheese. Similarly, to other soft, surface-ripened cheeses, it also excels as a whole baked cheese.
Always serve with a spoon. Just leave it out at room temperature for an hour or two and enjoy spooning this cheese onto a piece of rye bread or your favourite roasted vegetables.
