One of the most pungent washed rind cheeses with a sticky amber rind that is washed with Marc de Bourgogne and brine when aged which brings out a meaty earthy aroma when unwrapped. The inside paste is gooey and a little more gentle than the aroma suggests, it will melt in your mouth like butter with a lingering umami burst.
Enjoy with off dry Riesling or red burgundy. A crispy rye cracker ie thinly sliced baguette are both great vessels for this cheese.
