Buche de Fontenay is one of the several French cheeses coming from master affineur Rodolphe Le Meunier. Modelled after the classic Saint Maure de Touraine, a traditional cheese from France’s Loire Valley, the Buche is log-shaped goat cheese made with pasteurised milk. The small forms are coated with vegetable ash for the classic appearance. After a 1-month aging period, Buche de Fontenay gets a bloomy geotrichum rind. The longer the period of aging, the drier the paste of the cheese becomes and the more concentrated the flavour.
With an initial bright and lactic flavour upon arrival via airfreight, this cheese develops beautiful vegetable and mineral notes as we age it in our affinage cave to compliment these initial bright and citrus like flavours.
Serving suggestions Pairs nicely with aromatic white wines of the Loire Valley, dry sparkling wines as well as a crisp rose during the warmer months with your favourite ripe seasonal berries.
