Couronne de Fontenay is one of the several French cheeses coming from master affineur Rodolphe Le Meunier that we have exclusively at Maker & Monger.
The name of this elegant cheese means "crown" as it shaped in a small crown shaped ring.
After a 1-month aging period Couronne de Fontenay cheese gets a bloomy geotrichum rind. The longer the period of aging, the drier the paste of the cheese becomes with mineral notes developing through the palate as the cheese dries out. We love to receive this cheese at its one month age and control its affinage/ripening period. The flavour we enjoy best is when it is fresh and vibrant with citrus notes at the front of the palate with a fudge like texture and hints of hay and mineral through the mouth.
Works exceptionally well with fresh berries when in season and aromatic white wines from the Loire Valley region.
